Juan Ruiz brings a wealth of international experience to his role as Head Chef at Prince Arthur Belgravia. Trained in Spain, he developed a strong technical foundation rooted in discipline, precision and a deep respect for exceptional ingredients. Over the course of his career, Juan has cultivated a refined style shaped by Peruvian, Spanish, Nordic, Mediterranean and French culinary influences.

His journey through high-end kitchens has taken him across three countries, including Michelin-starred environments that helped define his approach to modern cooking. Formative roles at acclaimed restaurants such as Cañabota in Seville and D’Olier Street in Dublin sharpened his ability to combine technical excellence with bold, ingredient-led flavour. His experience in large-scale banqueting and event dining has further strengthened his versatility, consistency and attention to detail.

Today, at Prince Arthur Belgravia, Juan draws on his Spanish heritage and international experience to create dishes that feel both contemporary and firmly rooted in tradition.
